**Smothered Pork Chops**
**Ingredients:**
– 1 cup all-purpose flour
– 2 tablespoons onion powder
– 2 tablespoons garlic powder
– 1 teaspoon red pepper flakes
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 4 thin pork chops
– 2 tablespoons bacon fat
– 2 tablespoons olive oil
– 2 cups buttermilk
– Chopped fresh parsley or green onions, for garnish (optional)
**Directions:**
1. In a pie plate, combine the all-purpose flour, onion powder, garlic powder, red pepper flakes, salt, and black pepper. Coat the pork chops in the flour mixture, shaking off any excess.
2. In a cast iron skillet over medium heat, melt the bacon fat and olive oil together. Gently place the pork chops in the skillet and fry them for about 5 minutes on each side until they turn golden brown. Remove the pork chops from the skillet.
3. Mix 1/2 cup of the flour mixture with the buttermilk until well combined. Pour this mixture into the skillet, stirring it into the hot fat. Bring the gravy to a boil, then reduce the heat to simmer until it thickens nicely, stirring often.
4. Return the pork chops to the skillet, covering them with the gravy. Simmer for an additional 5 minutes or until the pork chops are cooked through.
5. Season with additional salt and pepper if desired. Garnish with chopped parsley or green onions, if you’d like, before serving.
