Ingredients
2 cups mashed potatoes (either leftover or freshly prepared)
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup milk
2 green onions, finely chopped
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika (optional)
Instructions
1. Preheat the Oven:
Begin by preheating your oven to 400°F (200°C) and lightly greasing a muffin tin.
2. Combine Ingredients:
In a large mixing bowl, blend the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, green onions, garlic powder, smoked paprika, salt, and pepper. Stir until the mixture is smooth and creamy.
3. Fill the Muffin Tin:
Spoon the potato mixture into the prepared muffin tin, ensuring each cup is filled approximately three-quarters full.
4. Bake:
Place the muffin tin in the oven and bake for 20-25 minutes, or until the tops are golden brown and the puffs are firm.
