Crockpot Creamy Potato & Hamburger Soup
Ingredients:
1 lb ground beef (or ground turkey)
4-5 medium russet potatoes, peeled and diced
3 carrots, peeled and diced
3 celery stalks, diced
1 small onion, diced (optional based on your preferences)
4 cups chicken or beef broth
1 cup heavy cream or half-and-half
2 cups shredded cheddar cheese
2 tbsp all-purpose flour
2 tbsp butter
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Chopped parsley or chives (optional, for garnish)

Instructions:
1. Brown the Meat:
In a skillet, cook the ground beef until browned. Drain excess grease and set aside.
2. Prepare the Crockpot:
In the crockpot, add the diced potatoes, carrots, celery, (and onion if using). Pour in the chicken or beef broth. Add the browned ground beef.
3. Season the Soup:
Add garlic powder, onion powder, salt, and pepper. Stir everything to combine.
4. Cook:
Cover and cook on low for 6-8 hours or high for 3-4 hours, until the vegetables are tender.
5. Make the Cream Base:
About 30 minutes before serving, melt the butter in a small saucepan. Whisk in the flour and cook for 1-2 minutes. Slowly add the heavy cream, whisking constantly, until smooth. Let it thicken slightly.
6. Add Cream and Cheese:
Pour the cream mixture into the crockpot and stir. Add the shredded cheddar cheese and mix well until melted and creamy.
7. Serve:
Taste and adjust seasonings if needed. Garnish with parsley or chives and serve warm with crusty bread or crackers.
