Braised Short Ribs

Ingredients:
– 1 tablespoon olive oil
– 3 1/2 pounds boneless short ribs, cut into 6-inch pieces (or 5 pounds bone-in short ribs)
– Salt and pepper to taste
– 3/4 cup sliced onion
– 3 carrots, peeled and cut into 3/4-inch thick slices
– 1 tablespoon minced garlic

Instructions:
1. Preheat your oven to 325°F (163°C).
2. In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
3. Season the short ribs generously with salt and pepper, then sear them in the pot until browned on all sides. Remove and set aside.
4. In the same pot, add the sliced onions and carrots, cooking until softened, about 4-5 minutes.
5. Stir in the garlic and cook until fragrant, about 1 minute.
6. Return the short ribs to the pot, cover, and transfer to the preheated oven.
7. Braise for about 2 1/2 – 3 hours, or until the meat is tender and falls apart.

Serve these braised short ribs with mashed potatoes, creamy polenta, or crusty bread for a comforting meal!
