Baked Sweet and Sour Chicken

Ingredients:
– 4 boneless, skinless chicken breasts, cut into 1″ pieces
– 1 cup cornstarch
– 2 large eggs, beaten
– 1/4 cup vegetable oil

For the Sweet and Sour Sauce:
– 3/4 cup sugar
– 1/2 cup distilled white vinegar
– 1/4 cup ketchup
– 1 tbsp soy sauce
– 1 tsp garlic powder

Instructions:
1. Preheat Oven: Preheat your oven to 325°F (160°C).

2. Prepare Chicken: Season the chicken pieces with salt and pepper.

3. Coat the Chicken: Place the cornstarch in a shallow dish and the beaten eggs in another. First, dredge each chicken piece in cornstarch, then dip into the eggs until coated.

4. Brown the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Brown the chicken on both sides (about 1-2 minutes per side). The chicken won’t be fully cooked yet – just crispy on the outside.

5. Arrange Chicken in Baking Dish: Place the browned chicken in a single layer in a 9×13-inch baking dish.

6. Make the Sauce: In a bowl, whisk together the sugar, vinegar, ketchup, soy sauce, and garlic powder until well combined.

7. Bake: Pour the sauce evenly over the chicken. Bake, uncovered, for 1 hour, stirring every 15-20 minutes to ensure the chicken is evenly coated.

8. Serve: Once done, serve the sweet and sour chicken over rice with a side of steamed vegetables or a simple salad. Enjoy!
