Mexican Taco Lasagna
Mexican Taco Lasagna is a delightful combination of two popular dishes: tacos and lasagna. This dish features layers of tortillas, seasoned ground beef, beans, cheese, and various toppings, resulting in a flavorful and satisfying meal.
Ingredients:
– 1 pound ground beef
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 packet of taco seasoning mix
– 1 can (15 ounces) black beans, drained and rinsed
– 1 can (15 ounces) corn kernels, drained
– 1 can (15 ounces) diced tomatoes, drained
– 1 cup salsa
– 12 corn tortillas
– 2 cups shredded Mexican cheese blend
– Optional toppings: sliced jalapeños, chopped cilantro, diced avocado, sour cream, etc.
Instructions:
1. Preheat the oven: Set your oven to 350°F (175°C).
2. Prepare the beef mixture: In a large skillet, brown the ground beef over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent. Drain any excess fat. Incorporate the taco seasoning mix, black beans, corn, diced tomatoes, and salsa into the skillet. Allow the mixture to simmer for approximately 5 minutes.
3. Assemble the lasagna: In a 9×13 inch baking dish, place a thin layer of the beef mixture at the bottom. Arrange 4 corn tortillas on top, slightly overlapping to cover the base. Spread half of the remaining beef mixture over the tortillas, followed by 1 cup of shredded cheese. Repeat the layering process with the remaining tortillas, beef mixture, and cheese.
4. Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25-30 minutes, or until the dish is heated through and the cheese is melted and bubbly.
5. Serve: Allow the Mexican Taco Lasagna to cool for a few minutes before slicing and serving. Garnish with your preferred toppings, such as sliced jalapeños, chopped cilantro, diced avocado, or sour cream.
