Ingredients 🛒

– 12 cooked lasagna noodles
– 10 oz fresh spinach
– 8 oz sliced mushrooms
– 2 cups ricotta cheese
– 2 cups shredded mozzarella cheese
– 1 cup grated Parmesan cheese
– 3 cups Alfredo sauce
– 2 tbsp olive oil
– 1 clove minced garlic
– Salt and pepper, to taste
– Chopped fresh parsley (for garnish)

Prepare Spinach and Mushrooms: In a large skillet, heat olive oil over medium heat. Sauté the minced garlic for 1 minute, then add the sliced mushrooms and cook until they are tender, approximately 5-6 minutes. Incorporate the spinach and cook until it wilts. Season with salt and pepper, then set aside.

Assemble the Lasagna: In a greased 9×13 inch baking dish, spread a thin layer of Alfredo sauce. Place 3 lasagna noodles on top. Layer with a portion of the spinach and mushroom mixture, followed by ricotta, mozzarella, and Parmesan. Continue layering until all ingredients are utilized, ensuring the final layer consists of Alfredo sauce and mozzarella.

Bake: Preheat the oven to 375°F (190°C). Cover the lasagna with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is bubbly and golden.

Serve: Allow the lasagna to cool for 5 minutes before slicing. Garnish with fresh parsley and enjoy!
