Honey BBQ Meatloaf
Ingredients:
For the Meatloaf:
– 1 1/2 lbs ground beef (or a mix of ground beef and ground pork)
– 1 cup breadcrumbs
– 1/2 cup milk
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 egg, lightly beaten
– 1/4 cup ketchup
– 1/4 cup honey
– 2 tablespoons Worcestershire sauce
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon smoked paprika (optional)
– 1/2 teaspoon dried thyme
For the Honey BBQ Glaze:
– 1/2 cup BBQ sauce
– 1/4 cup honey
– 1 tablespoon Dijon mustard (optional)
Instructions:
1. Preheat the Oven:
– Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Prepare the Meatloaf Mixture:
– In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for a few minutes until the breadcrumbs absorb the milk.
– Add the ground beef, finely chopped onion, minced garlic, beaten egg, ketchup, honey, Worcestershire sauce, salt, black pepper, smoked paprika, and dried thyme to the breadcrumb mixture.
– Mix until well combined, but do not overmix, as this can make the meatloaf dense.
3. Shape the Meatloaf:
– Transfer the meatloaf mixture to the prepared baking sheet or loaf pan. Shape it into a loaf shape if using a baking sheet.
4. Prepare the Honey BBQ Glaze:
– In a small bowl, mix together the BBQ sauce, honey, and Dijon mustard (if using).
5. Bake the Meatloaf:
– Brush half of the honey BBQ glaze over the top of the meatloaf.
– Bake in the preheated oven for 45 minutes.
6. Add More Glaze:
– Remove the meatloaf from the oven and brush the remaining honey BBQ glaze over the top.
– Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
7. Rest and Serve:
– Allow the meatloaf to rest for 10 minutes before slicing. This helps keep it moist and makes it easier to slice.
– Serve hot, with additional BBQ sauce on the side if desired.
