Bacon Brown Sugar Meatloaf

Ingredients:

Brown Sugar-Ketchup Glaze:
– 1/4 cup ketchup or chili sauce
– 2 tablespoons light or dark brown sugar
– 2 teaspoons cider or white vinegar

Meatloaf:
– 2 teaspoons vegetable oil
– 1 medium onion, chopped
– 2 garlic cloves, minced
– 2 large eggs
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon ground black pepper
– 2 teaspoons Dijon mustard
– 2 teaspoons Worcestershire sauce
– 1/4 teaspoon hot red pepper sauce
– 1/2 cup milk, buttermilk, or low-fat plain yogurt
– 2 pounds meatloaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
– 2/3 cup crushed saltine crackers (about 16) or quick oats, or 1 1/3 cups fresh bread crumbs
– 1/3 cup minced parsley
– 6 ounces thin-sliced bacon

Directions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with aluminum foil.
2. In a small bowl, mix together the ketchup or chili sauce, brown sugar, and vinegar. Set aside.
3. Heat the vegetable oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes. Remove from heat and let cool.
4. In a large bowl, whisk together the eggs, dried thyme, salt, ground black pepper, Dijon mustard, Worcestershire sauce, hot red pepper sauce, and milk or yogurt.
5. Add the meatloaf mix, crushed saltine crackers or bread crumbs, minced parsley, and the cooled onion and garlic mixture to the bowl. Mix until just combined.
6. Transfer the meat mixture to the prepared baking sheet and shape it into a loaf. Brush the loaf with some of the ketchup glaze.
7. Arrange the bacon slices over the top of the meatloaf, tucking the ends underneath to prevent curling.
8. Bake the meatloaf for 45 minutes, then brush with more of the glaze. Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
9. Let the meatloaf rest for 10 minutes before slicing and serving.
