Buttery Pecan Snowball Cookies
Ingredients:
– 1 cup unsalted butter, softened
– 1/2 cup powdered sugar (plus extra for rolling)
– 2 teaspoons vanilla extract
– 2 cups all-purpose flour
– 1 cup finely chopped pecans
– 1/4 teaspoon salt
Instructions:
1. Preheat oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream butter and sugar: In a large bowl, cream the softened butter and 1/2 cup powdered sugar until light and fluffy. Add vanilla extract and mix well.
3. Mix in dry ingredients: Gradually add in flour and salt, mixing until just combined. Stir in the finely chopped pecans.
4. Form dough balls: Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 1 inch apart.
5. **Bake:** Bake for 12–15 minutes or until the bottoms are lightly golden. Remove from oven and let cool slightly.
6. Roll in powdered sugar: While the cookies are still warm, roll them in powdered sugar. Once completely cooled, roll them again for an extra snowy coating.
