German Chocolate Pie

Ingredients:
– 1 pie crust (store-bought or homemade)
– 4 oz sweet baking chocolate (or German chocolate)
– 1/4 cup butter
– 1 can (12 oz) evaporated milk
– 1 1/2 cups sugar
– 3 tablespoons cornstarch
– 1/8 teaspoon salt
– 2 eggs
– 1 teaspoon vanilla extract
– 1 1/3 cups sweetened shredded coconut
– 1/2 cup chopped pecans

For the Topping:
– 3/4 cup evaporated milk
– 3/4 cup sugar
– 1/4 cup butter
– 2 egg yolks
– 1 teaspoon vanilla extract
– 1 cup shredded coconut
– 1/2 cup chopped pecans

Instructions:

1. Prepare the Pie Crust:
Preheat oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.

2. Melt Chocolate:
In a medium saucepan, melt the chocolate and butter over low heat, stirring frequently. Once melted, remove from heat and slowly whisk in the evaporated milk.

3. Prepare the Filling:
In a separate bowl, mix together the sugar, cornstarch, and salt. Add the eggs and vanilla extract, and beat well. Gradually stir the chocolate mixture into the egg mixture until fully combined.

4. Bake:
Stir in the coconut and pecans, then pour the filling into the pie crust. Bake for 45-50 minutes, or until the center is set but slightly wobbly. Allow the pie to cool completely.

5. Prepare the Topping:
In a medium saucepan, combine the evaporated milk, sugar, butter, and egg yolks over medium heat. Stir constantly until the mixture thickens, about 10 minutes. Remove from heat, then stir in the vanilla, coconut, and pecans.

6. Top the Pie:
Spread the topping evenly over the cooled pie. Let it set for a few hours before serving to ensure the topping firms up.
