Patty Melt with Secret Sauce
Ingredients:
– 1 lb ground beef (80/20 blend for best flavor)
– 1 medium onion, thinly sliced
– 4 slices of rye bread (or your choice of bread)
– 4 slices of Swiss or provolone cheese
– 2 tablespoons butter (for bread toasting)
– Salt and pepper to taste

Secret Sauce:
– 2 tablespoons mayonnaise
– 1 tablespoon ketchup
– 1 teaspoon mustard (yellow or Dijon)
– 1 tablespoon sweet pickle relish
– Dash of garlic powder
– Dash of paprika

Instructions:

1. Prepare the Sauce:
In a small bowl, mix all the sauce ingredients together until well combined. Set aside for later.

2. Caramelize the Onions:
In a skillet, heat a tablespoon of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 15-20 minutes. Set aside.

3. Cook the Patties:
Form the ground beef into thin patties, about the size of your bread slices. Season with salt and pepper. In the same skillet, cook the patties over medium-high heat until browned and cooked through (about 3-4 minutes per side). Set aside.

4. Assemble the Patty Melts:
Butter one side of each bread slice. On the unbuttered side, spread the secret sauce. Add a slice of cheese on top of the sauce, then place a cooked patty on the cheese. Add caramelized onions, another slice of cheese, and then top with another slice of bread, buttered side out.

5. Grill the Patty Melts:
In a skillet or on a griddle over medium heat, cook each sandwich until the bread is golden brown and the cheese is melted (about 3-4 minutes per side). Press down gently with a spatula while grilling for even cooking.

6. Serve:
Slice in half and serve with your favorite sides like fries, pickles, or coleslaw.
