Taco Lasagna
Ingredients:
– 1 lb ground beef or turkey
– 1 packet taco seasoning
– 1 can (10 oz) diced tomatoes with green chilies (drained)
– 1 can (15 oz) black beans (drained and rinsed)
– 1 small onion, diced
– 2 cups salsa
– 1 cup sour cream
– 1 cup ricotta or cottage cheese
– 6-8 flour tortillas (or use corn tortillas for a gluten-free option)
– 3 cups shredded Mexican cheese blend
– Optional toppings: sliced black olives, jalapeños, green onions, cilantro
Instructions:
1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Cook the Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain the excess fat.
3. Add Seasoning: Stir in taco seasoning, diced tomatoes with chilies, black beans, and onions. Cook for another 3-5 minutes to combine the flavors.
4. Prepare Cheese Mixture: In a bowl, mix the sour cream with ricotta or cottage cheese.
5. Layer the Lasagna:
– Spread a thin layer of salsa on the bottom of the baking dish.
– Place a layer of tortillas over the salsa, tearing them to fit.
– Add a layer of the meat mixture, followed by a layer of the cheese mixture, and a sprinkle of shredded cheese.
– Repeat the layers (salsa, tortillas, meat, cheese mixture, shredded cheese) until you’ve used up the ingredients, finishing with a layer of shredded cheese on top.
6. Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
7. Cool and Serve: Let it cool for 5-10 minutes before slicing. Garnish with any optional toppings like green onions, cilantro, or jalapeños.
Tips:
– Serve with extra salsa, guacamole, or sour cream on the side.
– You can also add layers of refried beans or corn for more texture and flavor.
