Ingredients:
2 large apples, peeled, cored, and diced
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup whole milk
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
Vegetable oil for frying
For the Glaze:
1 1/2 cups powdered sugar
3 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
In a large bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
In a separate bowl, beat the eggs, then whisk in the milk, vanilla extract, and melted butter.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
Carefully drop large spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Fry until golden brown, about 3-4 minutes per side, turning once. Drain on paper towels.
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth to make the glaze.
While the fritters are still warm, dip them into the glaze or drizzle the glaze over the top. Let the glaze set before serving.
