Old-Fashioned Chicken and Dumplings Recipe

Ingredients:
– For the Chicken & Broth:
– 1 whole chicken (about 4 lbs)
– 8 cups water
– 1 onion, diced
– 2-3 garlic cloves, minced
– 2 carrots, sliced
– 2 celery stalks, sliced
– Salt and pepper, to taste
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– 2 bay leaves

– For the Dumplings:
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1 teaspoon salt
– 1 tablespoon dried parsley (optional)
– 1 cup milk
– 2 tablespoons melted butter

Instructions:
1. Cook the Chicken:
– In a large pot, place the chicken, water, onion, garlic, carrots, celery, thyme, parsley, and bay leaves. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the chicken is tender.
– Remove the chicken from the pot and set it aside to cool. Strain the broth to remove vegetables and bay leaves. Shred the chicken, discarding the skin and bones.

2. Prepare the Dumplings:
– In a bowl, whisk together flour, baking powder, salt, and parsley (if using).
– Stir in the milk and melted butter until combined. The dough will be thick and sticky.

3. Simmer the Dumplings:
– Bring the strained broth to a simmer over medium heat.
– Drop spoonfuls of the dumpling dough into the broth, spacing them out slightly. Cover the pot and simmer for about 15-20 minutes, or until the dumplings are cooked through.

4. Serve:
– Stir the shredded chicken back into the broth and dumplings. Simmer for an additional 5 minutes to warm the chicken.
– Season with additional salt and pepper if needed.
– Serve hot and enjoy!
