Mississippi Mud Potatoes

Mississippi Mud Potatoes:

Ingredients:
– 4 medium golden potatoes, diced
– 6 slices of bacon, cooked and crumbled
– 1 cup sharp cheddar cheese, shredded
– 1 cup Monterey Jack cheese, shredded
– 2 green onions, sliced
– 2 cloves garlic, minced
– 2 tablespoons butter, melted
– ½ teaspoon garlic powder
– Salt and pepper, to taste

Instructions:

1. Preheat Oven: Preheat your oven to 375°F (190°C).

2. Prepare the Potatoes: Dice the potatoes into bite-sized pieces and place them in a large bowl.

3. Season: Add the melted butter, garlic powder, minced garlic, salt, and pepper to the potatoes. Toss everything to coat evenly.

4. Bake Potatoes: Spread the seasoned potatoes evenly in a baking dish. Cover with foil and bake for 30-35 minutes, until the potatoes are tender.

5. Add Cheese and Bacon: Remove the foil and sprinkle the shredded cheddar and Monterey Jack cheeses over the potatoes. Top with crumbled bacon.

6. Finish Baking: Place the dish back in the oven, uncovered, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

7. Garnish: Once baked, remove from the oven and sprinkle sliced green onions over the top.

8. Serve: Serve warm as a side dish or even as a loaded potato main course!
