Cheesy Italian Meatloaf
📝 Ingredients:
– 1 ½ lbs ground beef
– 1 cup Italian breadcrumbs
– 1 cup shredded mozzarella cheese (divided)
– ½ cup grated Parmesan cheese
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 egg
– ½ cup milk
– 1 teaspoon Italian seasoning
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 1 cup marinara sauce (divided)
– Fresh parsley, chopped (for garnish)

1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, ½ cup mozzarella cheese, Parmesan cheese, onion, garlic, egg, milk, Italian seasoning, salt, and pepper. Mix until well combined.
3. Form the Meatloaf: Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
4. Add Sauce: Spread ½ cup of marinara sauce over the top of the meatloaf.
5. Bake: Bake in the preheated oven for 45 minutes.
6. Add Cheese: Remove from the oven, spread the remaining marinara sauce on top, and sprinkle with the rest of the mozzarella cheese.
7. Bake Again: Return to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
8. Garnish and Serve: Allow the meatloaf to rest for a few minutes, garnish with chopped parsley, slice, and serve.
