Butternut Cookies
Ingredients:
– 3/4 cup butter, room temperature + 1 tablespoon
– 1/2 cup powdered sugar
– 1/4 teaspoon salt
– 1 3/4 cups all-purpose flour
– 1 package butterscotch chips (6 oz.)
– 1 cup finely chopped pecans
For the Rum Glaze:
– 3 cups powdered sugar
– 3 to 4 tablespoons milk or water
– 1 teaspoon rum extract
– 1/2 cup chopped pecans
Instructions:
1. Preheat the Oven: Set your oven to 350°F (175°C).
2. Prepare the Dough:
– In a large bowl, cream the butter and powdered sugar until light and fluffy.
– Add the salt and mix in the flour gradually until fully incorporated.
– Fold in the butterscotch chips and finely chopped pecans until evenly distributed.
3. Shape the Cookies:
– Scoop out tablespoon-sized portions of dough and shape them into small balls or crescents, depending on your preference.
– Place them on an ungreased baking sheet, spacing them about an inch apart.
4. Bake:
– Bake in the preheated oven for 12-15 minutes, or until the edges are just lightly golden.
– Let the cookies cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
5. Prepare the Rum Glaze:
– In a medium bowl, whisk together the powdered sugar, milk or water, and rum extract until smooth and the desired consistency is reached.
– Stir in the chopped pecans.
6. Glaze the Cookies:
– Once the cookies have cooled, drizzle or dip them in the rum glaze. Allow the glaze to set before serving.
