Mini Meatloaf Muffins
Ingredients:
– 1 ½ lbs. ground beef
– ½ cup chopped onion
– ½ cup chopped bell pepper
– 2 tsp. Worcestershire sauce
– 2 tbsp. chopped fresh parsley
– 1 tsp. Dijon mustard
– ¼ cup BBQ sauce
– ⅔ cup bread crumbs
– 1 tsp. Italian seasoning
– 1 tsp. garlic powder
– 1 large egg
– Salt and pepper to taste
For the Glaze:
– ¼ cup BBQ sauce
– ¼ cup ketchup
– 1 tbsp. honey
Instructions:
1. Preheat Oven: Set your oven to 350°F (175°C).
2. Prepare the Meatloaf Mixture: In a mixing bowl, combine all the meatloaf ingredients. Use your hands to knead the mixture until well combined.
3. Form the Muffins: Grease a muffin tin well, then evenly divide the meat mixture into 10 sections of the tin.
4. Make the Glaze: In a small bowl, stir together the BBQ sauce, ketchup, and honey. Spoon or brush the glaze over each mini meatloaf.
5. Bake: Place the muffin tin in the preheated oven and bake for 25 minutes, or until the muffins are browned and cooked through.
