The Chile Rellenos Casserole recipe
Ingredients:
– cooking spray
– 2 cans (7 ounces each) whole green chile peppers, drained
– 8 ounces monterey jack cheese, shredded
– 8 ounces cheddar or longhorn cheese, shredded
– 2 large eggs
– 1 can (5 ounces) evaporated milk
– 2 tablespoons all-purpose flour
– 1/2 cup milk (optional)
– 1 can (8 ounces) tomato sauce
Directions:
1. preheat your oven to 350°f (175°c) and lightly coat a baking dish with cooking spray.
2. spread half of the drained green chile peppers in the prepared baking dish. sprinkle with half of the monterey jack and cheddar cheese. repeat the layers with the remaining chiles and cheese.
3. in a bowl, whisk together the eggs, evaporated milk, flour, and milk (if using) until smooth. pour this mixture evenly over the chile and cheese layers.
4. pour the tomato sauce evenly over the top of the casserole.
5. bake in the preheated oven for about 30-35 minutes or until the casserole is set and the top is lightly browned.
6. let the casserole cool for a few minutes before slicing and serving.
