Rotisserie Chicken and Stuffing Casserole
Rotisserie Chicken and Stuffing Casserole Recipe
INGREDIENTS:
⏺ 1 package Stove Top stuffing mix (or more to taste)
⏺ 1 whole cooked and shredded rotisserie chicken
⏺ 1 ½ cups Water or chicken broth
⏺ ¼ cup Butter
⏺ 3 Stalks Celery, diced
⏺ 1 Onion, diced
⏺ 1 can Cream of chicken soup
⏺ ½ can Cream of mushroom soup
⏺ 8 ounces Sour cream
⏺ Salt and pepper to taste
INSTRUCTIONS:
1️⃣. Preheat the oven to 350°F (175°C). Lightly spray a 9 x 13 inch baking pan with cooking spray.
2️⃣. Prepare the Stuffing:
Bring the water (or chicken broth) to a boil in a medium saucepan.
Once boiling, add the stuffing mix.
Remove the pan from heat, cover it, and let it sit to the side.
After resting, fluff the stuffing with a fork.
3️⃣. Sauté the Vegetables:
In a skillet, melt the butter over medium heat.
Add the diced onion and celery, and cook them until softened.
4️⃣. Combine the Soups and Sour Cream:
In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, and sour cream.
5️⃣. Assemble the Casserole:
Spread the shredded chicken in an even layer at the bottom of the baking dish.
Layer the softened onions and celery over the chicken.
Season with salt and pepper to taste.
6️⃣. Layer and Bake:
Pour the soup mixture over the onions and celery.
Top the casserole with the prepared stuffing mix.
7️⃣. Bake until Bubbly and Browned:
Bake the casserole in the preheated oven for 1 hour, or until the top is golden brown and the filling is bubbly.
