Southern Styled Lima Beans

Southern-style lima beans are a delicious and hearty dish, often made with simple ingredients to highlight the beans’ natural flavor. Here’s how you can make them:

Ingredients:
– 1 pound dried large lima beans (also called butter beans)
– 1 smoked ham hock or ham bone
– 4 cups chicken broth
– 2 cups water (more as needed)
– 1 onion, chopped (optional, but you can leave it out)
– 2 cloves garlic, minced
– 1 bay leaf
– Salt and pepper to taste
– 2 tablespoons butter

Instructions:

1. Prepare the Beans:
– Rinse the dried lima beans thoroughly. If you have time, soak them overnight in plenty of water. If not, you can use the quick soak method: cover the beans with water, bring to a boil for 2 minutes, then turn off the heat and let them soak for 1 hour. Drain the beans afterward.

2. Cook the Beans:
– In a large pot, combine the soaked lima beans, ham hock, chicken broth, and water. Add the chopped onion (if using), minced garlic, and bay leaf.

3. Simmer:
– Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if necessary to keep the beans covered.

4. Season:
– Once the beans are tender, season with salt and pepper to taste. Remove the ham hock and bay leaf. Shred any meat from the ham hock and add it back to the beans. Stir in the butter for extra richness.

5. Serve:
– Serve the lima beans hot, alongside cornbread or over rice for a complete Southern meal.
