Broccoli Cheddar Twice-Baked Potatoes

– 4 large russet potatoes
– 1 cup cheddar cheese, shredded
– 1 cup broccoli florets, finely chopped
– 1/2 cup sour cream
– 1/4 cup milk
– 2 tablespoons butter
– 1/4 teaspoon garlic powder
– Salt and pepper to taste
– Optional: 2 tablespoons chopped chives for garnish

1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and prick several times with a fork. Place them directly on the oven rack and bake for about 1 hour, or until tender.
3. Remove from oven and let cool slightly. Cut potatoes in half lengthwise and carefully scoop out the insides, leaving a thin shell.
4. In a bowl, mash the potato insides with sour cream, milk, butter, garlic powder, salt, and pepper.
5. Stir in the chopped broccoli and three-quarters of the cheddar cheese into the potato mixture.
6. Spoon the mixture back into the potato skins and sprinkle with the remaining cheese.
7. Bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
8. Garnish with chives if desired and serve hot.
