– 4 catfish fillets, about 6 ounces each
– 1 cup yellow cornmeal
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon cayenne pepper
– Salt and black pepper to taste
– Vegetable oil for frying
– 1 pound spaghetti
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh basil, chopped
– Grated Parmesan cheese, for serving

1. In a shallow bowl, mix together cornmeal, paprika, garlic powder, cayenne pepper, salt, and black pepper.
2. Dredge each catfish fillet in the seasoned cornmeal, coating evenly.
3. Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the catfish fillets for 4-5 minutes per side or until golden and crispy. Drain on paper towels.
4. Cook spaghetti according to package instructions until al dente. Drain and return to the pot.
5. In a small skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
6. Toss the cooked spaghetti with the garlic oil, parsley, and basil. Season with salt and pepper to taste.
7. Serve the fried catfish over the herbed spaghetti, garnished with grated Parmesan.
